Our lemon curd, using home grown lemons and locally sourced free range eggs, is made from a recipe that my mother used. She, being English, called it lemon curd, and sniffed when others insisted that it was called lemon butter.
Sensational on tarts, pavlova, scones, toast or waffles, one of lemon curd’s most wonderful uses in on pancakes. I can still taste Mum’s Shrove Tuesday pancakes with lemon curd, made extra-special for guests with a dusting of white snowy icing sugar. Wait until you’ve tried it: you’ll be wishing that Shrove Tuesday came around more than once a year…
